Simple Gluten-Free Pancakes
Using something like Doves Farm gluten free flour is a pretty good way to nail a pancake that anyone in the family will eat.
I use a method I saw Jamie Oliver use once.
- 1 mug of flour
- 1 mug of milk or milk substitute
- 1-2 eggs
Optional extras added to the batter
- Dessicated coconut
- Chia seeds
- Grated lemon zest and sultanas
- Cacao nibs
- Whisk all the ingredients together.
- Fry like a crepe in some butter.
Serve with toppings of your choice.
